  • Smoked Salmon Pasta Salad

    with Stella Cadente Meyer Lemon Oil
    Serves 4.

        1 # Penne pasta or Fusili pasta
        6oz smoked salmon
        2 T. rinsed and minced capers
        zest of 1 lemon
        2T chopped garlic chives
        2T chopped Italian parsley
        1T fresh lemon juice
        3T Stella Cadente Meyer Lemon Oil
        Salt and freshly ground pepper to taste

    Boil the pasta in plenty of salted water until al dente and rinse under cold water. Shred the salmon into pieces just smaller than the pasta.

    In a small bowl whisk together the lemon juice, Stella Cadente Meyer Lemon oil, salt and pepper.

    In a large bowl toss together the pasta, smoked salmon, lemon zest, chives and parsley. Drizzle the dressing over the pasta and toss lightly to coat and serve at room temperature with a mixed green salad and crusty french bread.
